Mangia Monday: Anytime Bruschetta

Culinary Concepts cooked up this amazing recipe for a fresh bruschetta to enjoy any where and any time.  With only the freshest ingrediants like spring peas, mint and cherry tomatoes, this little treat will send your taste buds straight to Italy.  Try it for yourself with the recipe below and whip it up for a DIY backyard wedding.


ANYTIME BRUSCHETTA
1Ž2 cup mixed Mediterranean olives, pitted and chopped
1 cup cherry tomatoes, chopped
1 cup spring peas, shelled
1Ž2 cup extra virgin olive oil
1Ž4 cup chopped fresh basil
1Ž4 cup chopped fresh mint
1 cup pistachios (without shell), minced in processor
1 teaspoon sea salt
--
1 French baguette, sliced
1Ž2 cup extra virgin olive oil
2 cloves garlic, peeled

For the Grilled Baguette:
Pre-heat oven to 350.  Brush slices of bread with olive oil.  Bake on a tray in the oven for 10 minutes or until slightly toasted.  Slice garlic cloves in half, and brush the top of the toasted baguette slices.

For the Bruschetta Topping:
Combine the olives, tomatoes, spring peas, mint, pistachios and sea salt.  Add a good glug of the olive oil until you reach the consistency you prefer.  Garnish with basil .
