Even though Punxsutawney Phil declared six more weeks of winter, we are eager to get into some spring season cuisine. Continental Catering brings us a light and fluffy Salmon en Papillote on their spring sit down menu. This lightly herbed cut of salmon lays on a bed of asparagus and baby carrots with accordion fingerling potatoes on the side. Nothing tastes more like spring than fresh fish and ripe veggies.
