Mangia Monday: Peach Balsamic Bruschetta

As peach season has finally come upon us, we are getting excited for the possibilities in cooking and baking with these sweet and fuzzy fruits.  If you are a fan of the Italian bruschetta, you will fall in love with this spin on the classic appetizer. Incorporate peaches into bruschetta with this peach, tomato, and mozzarella crostini.  The dish has a blend of sweet and savory flavors that a topping of balsamic vinegar ties together.  It is a simple recipe that takes almost no time at all to make while keeping a sophisticated, unexpected flavor that will wow guests at any get-together.  Just slice and stack the different ingredients on each other, and garnish with strips of fresh basil and balsamic vinegar, and you have yourself a gourmet crostini appetizer that will not disappoint!


What you'll need: 

- A French baguette, sliced and toasted
- Fresh tomatoes, sliced
- Fresh mozzarella, sliced
- Fresh peaches, sliced
- Fresh basil, cut into strips
- Balsamic vinegar for drizzling
- Salt and pepper to taste

Stack them up the way you like and enjoy!
